Peasant Omelette

Brown bacon, potatoes and onions in a medium skillet over medium heat or until onions are translucent. In a separate bowl beat eggs with milk, salt and pepper. Layer sliced tomatoes over bacon, potatoes and onions. Pour egg mixture over tomatoes, sprinkle cheese on top. Cover and cook on low heat until top is cooked and creamy. Approximately 10 minutes. Sprinkle fresh parsley and serve.


Peasant Omelette


- 4-5 slices bacon
- 4 boiled potatoes, cubed
- 1 onion, chopped
- 4 eggs
- 4 tablespoons milk
- salt and pepper
- 2 sliced tomatoes
- 2 ounces grated swiss cheese
- fresh chopped parsley
